The strengths traditional Mallorcan oil are: golden color, sweet, transparent, high fruity flavored with nuts taste, especially almonds and green grass, accented with bitter and spicy characteristics that indicate the optimum harvest moment of the olive, when it was still green and can express all their aromatic potential. 

Its astringency may be caused for where this variety is grafted: the olive trees, which give to the oil this wild character and retain all the flavours of our land.
