A tradition with deep roots
If there is one date marked in red on the island’s calendar, it is January 17th. Sant Antoni is not just a festival; it is the smell of smoke, the dance of the dimonis, and the pleasure of sharing a great torrada with friends and family.

The Ritual of Fire: The Torrada
Since a torrada is a very specific Balearic tradition, you might want to add a brief explanation if your audience is international, such as: “The ritual of fire: The traditional outdoor grill (Torrada).
- Llonganissa (Traditional cured paprika sausage).
- Botifarró (Local blood sausage with spices).
- Carn i xua (Pork belly and lean meat cuts).
- Pa pagès with a crunchy crust (Traditional farmhouse bread).
- A glass of herbes (sweet or dry), made with the wild fennel of our land.

Flavors that celebrate: Espinagada and Coca
In addition to the grill, these dates have two undisputed queens at the table. Do you dare to cook them?
What is the origin? Saint Anthony is the patron saint of animals. For this reason, the Beneïdes (animal blessings) are celebrated in January.
What about the dimonis? They represent the temptations suffered by the saint and are the soul of the festival with their traditional dances.
And in Palma? In “Ciutat” (Palma), the festivities continue just a few days later with the foguerons of Saint Sebastian, the patron saint of the city, on the night of January 19th.
