Llampuga with red pepper
Ingredients Llampuga with red pepper recipe
- Llampuga (dorado in spanish)
- A couple of potatoes
- 3 red peppers from Agromart
- 1 head of garlic
- 2 bay leaves
- 400 g of tomato
- Salt to taste
- Black pepper to taste
- A sprig or a teaspoon of marjoram
- Olive oil
Preparation of Llampuga with Peppers
1.
Prepare the potato base: Slice the potatoes and fry them. Arrange them on the plate to serve as the base for the llampuga.
2.
Season and flour the llampuga: Add salt and pepper to the llampuga and coat it with flour. Lightly fry it until it takes on color, then place it over the potatoes.
3.
Sauté the peppers and garlic: Wash the red peppers and cut them into small pieces by hand. Separate a head of garlic and sauté everything together over low heat with a little olive oil. Add a few bay leaves and let it cook for a while.
4.
Add the tomato: When the peppers are almost done, add crushed tomato to the sauté. Let the sauce reduce, taste to adjust salt and spices if needed, and allow it to season well.
5.
Plate and serve: Pour the sauce over the llampuga and potatoes. To accompany this dish, we recommend a regional red wine: L’amo en Tomeu de sa Sínia.
Enjoy!
