Cherry tomato coca recipe

Ingredients necessary for a cherry tomato coca:
For the dough:
- 160 g of whole spelt flour
- 70 g of unsalted butter
- 1 egg
- 20 g of grated Parmesan cheese
For the cheese layer:
- 100 g of cream cheese
For the cherry tomato layer:
- 500 g of Agromart cherry tomatoes
For the pesto sauce:
- Basil
- Pine nuts
- Parmesan
You will also need:
- Extra virgin olive oil
- Salt
- Black pepper
- Oregano
Steps to cook a cherry tomato coca:
1. Prepare the crispy base of the coca
Combine the spelt flour with the butter (which should be at room temperature). Mix well until you get a wet sand texture. Add the egg and grated Parmesan cheese, integrate everything well, and let the dough rest.
2. Prepare a creamy and aromatic filling
Meanwhile, prepare the filling. Mix the cream cheese with oil, salt, black pepper, and oregano. Cut the cherry tomatoes in half and season with oil, salt, and black pepper to taste.
3. Assemble the coca like a professional
On baking paper, roll out the dough with a rolling pin (it doesn’t need to be round). Spread the cheese layer, leaving a margin of about 3 centimeters on each side, and top it with all the tomatoes.
4. Bake until perfection
Fold the sides manually and bake the coca at 180°C for about 30 minutes.
5. The final touch with pesto and Parmesan
To finish, prepare the pesto with the basil leaves, toasted pine nuts, salt, oil, black pepper, a garlic clove, and grated Parmesan cheese. When the coca is cooked, decorate it with the pesto and Parmesan cheese slices.
