Cocarrois traditional mallorcan recipe
Discover the traditional recipe for cocarrois with vegetables, made with ingredients from Agromart. A typical Easter preparation on Mallorca.
Needed ingredients for traditional vegetable cocarrois:

Ingredients to make the dough for the cocarrois:
- 2 cups of water
- 1 cup of extra virgin olive oil
- 10 g of yeast
- Salt
- Regular flour
Ingredients to make the filling for the cocarrois:
- Cabbage
- Cauliflower
- Leeks
- Raisins
- Botifarró (Mallorcan blood sausage)
- Salt
- Black pepper
- Tap de Cortí paprika
- Olive oil
Steps to cook traditional cocarrois:
1. Preparation of the dough
First, we will make the dough, as it needs to rest for about 20 minutes. We need to mix the water, oil, and yeast, then gradually add flour until we achieve the right texture.

2. Preparation of the vegetables and spices
Next, we will chop the vegetables finely so they don’t create holes in the cocarroi when it cooks. We mix them with the spices, and then we can prepare the base of the cocarroi.

3. We make small balls and roll out the dough
We make balls of about 100 g of dough and roll them out with a rolling pin.

4. Filling with traditional ingredients
Then, we add a handful of raisins, two pieces of botifarró, and the vegetables, which we must drain to ensure they don’t have too much water.

5. Closing and baking the cocarroi
We close the dough and pinch the two parts together with our fingers. We shape it into a ring and bake for approximately one hour at 180ºC.
