Artichokes with Serrano ham
Ingredients artichokes with Serrano ham
- 4 very tender artichokes
- 4 egg yolks
- 100ml soy souce
- lemon
- 200g of Serrano ham, cut into thin strips and small pieces
- Salt
- olive oil
- water
Preparation artichokes with Serrano ham

Let the egg yolks mature in soy sauce for about 3 hours.

Cut the stem of the artichoke flush so it sits flat. Remove the outer leaves with a knife. When the leaves are tender, cut them all at once.

Boil the artichokes for 15 minutes with water, a tablespoon of salt, and a slice of lemon. Once cooked, drain and cool. Open the leaves to form a flower and flatten the center slightly.

In a pan with a little olive oil, fry the base of the artichoke until golden, then flip and fry the other side.
5.
Place the artichoke flowers on the serving plate. Cover with pieces of Serrano ham cooked for 30 seconds in the microwave between two sheets of kitchen paper. Place the egg yolk in the center and drizzle with a few drops of soy sauce.
